We removed Step 48.
Instead of using flour
to lock the hearth firebrick into position, we recommend you use the ash from
the curing fires instead. We are
currently working on Directions 2.0 and that change will be made, but for
now... just ditch the flour (it tends to mold w/ moisture).

High-Temperature Mortar – Low-Cost 4 Material Blend
High-Temp Mortar is basically the glue that holds all the brick and block together on all wood-fired ovens (and fireplaces). This simple and inexpensive high-temperature mortar recipe is used the world over. From Australia to Zimbabwe… we all make it the same way.
In a clean wheelbarrow or mixing tub, thoroughly dry-mix the (4) materials listed below in a 3:1:1:1 ratio.
- 3 Parts Silica Sand
- 1 Part Hydrated Lime
- 1 Part Fireclay
- 1 Part Portland Cement
Silica Sand –
Silicon is the 2nd most abundant element in the earth’s crust – so it should be easy to find bags of Silica Sand near you - right? Well, not so much. Pure Silica Sand (which is almost like powder) can be elusive. Some Landscape supply stores 422 carry this item – some don’t. But almost EVERY Pool Supply store does (it’s pool filter sand) Google.com/maps/search/Pool+Supply 155
.
ONLY USE THESE TYPES OF SAND
Pool Filter Sand
Fine Sand
Fine Silica Sand (All mesh sizes)
(The Finer the Grain the Better)
DO NOT USE -
All-Purpose Sand
Concrete Sand
Course Sand
Mason Sand
Medium Sand
Mortar Sand
Multi-Purpose Sand
Natural Sand
Play Sand
Sand / Topping
.
Fire Clay / Mortar Clay / Bricklayers Clay -
Pure Fire Clay, Mortar Clay and/or Bricklayers Clay is an organic material that has been dried and turned into a powder form. It is usually a brackish red / brown in color or it could be white / grey. The texture is like baking flour or baking soda.
These powdered clays can be found at most Masonry and Landscape Supply Stores 422 for about $10 - $15 a bag. You may find a bag at a Big Box store, but it’s unlikely. And you will never find fire clay at a Refractory Materials dealer.
If you can’t find a bag near you, be sure to check with your local Ceramic Supply Google.com/maps/search/ceramic 320 and they can order a bag of Fire clay for you.
If all else fails - we can always ship you a bag of Fire Clay 241.
Hydrated Lime / Powdered Lime / Construction Lime -
This is the product that confuses some of our customers. It is NOT granulated Lime that is sold in the plant section at Home Depot or Lowes but a white and fluffy material that looks and feels like powdered sugar. It is used in the masonry and landscape industry – but it also used in the Plant Nursery industry in 50lb bags.
If you are unable to find this product at your Landscape Supply, call a local Plant Nursery and they can order lime for you - Google.com/maps/search/plant+nursery 152
Portland Cement -
Portland Cement is sold at EVERY Big Box and most Mom & Pop hardware and lumber stores. It’s a staple in the construction industry… and it’s cheap! Just make sure you buy pure Portland Cement – NOT PORTLAND CEMENT WITH LIME PRE-MIXED INTO IT. That will throw-off the mixture of the high-temp blend.
PLEASE NOTE - THIS IS A SCRATCH RECIPE FOR HIGH-TEMPERATURE MORTAR. NO MATTER WHAT YOU READ ONLINE OR WATCH ON YOUTUBE, THIS BLEND CAN NOT, AGAIN, CAN NOT BE USED AS A HOMEMADE CASTABLE REFRACTORY. THIS RECIPE IS TO BE USED AS A MORTAR ONLY.
Be sure to Download & Print this High-Temperature Mortar Recipe!

How to Make / Mix Perlite or Vermiculite with Portland Cement for Pizza Oven Insulation
Insulation is crucial in the walls of your home. It keeps your home warm in the cold winter months and cool in the hot summer months. It is equally crucial in your BrickWood Box. When you are baking in the LOWER OVEN, the insulation that is in the cinderblock helps retain the heat that was created when you fired the oven.
The insulation mix that is in the HEARTH SLAB (under the hearth slab firebricks) keeps the heat in the hearth firebrick. If you didn’t have the insulation mix in the hearth slab, the slab would absorb the heat from the hearth firebrick like a sponge absorbs water. This heat absorption would prevent the hearth firebrick from reaching their maximum heat retaining potential. And super-hot hearth firebrick not only radiate intense heat for hours (which is really helpful when BBQ’ing), but you will actually use less firewood compared to metal lined wood-fired BBQ’s.
The insulation mix in the UPPER OVEN (between the 2 rows of firebrick and the concrete panels) help retain the intense heat that is made during the pig roasting process – and retains the heat that is created during the smoking process (when the fire is made in the lower oven). As the smoke rises out of the smoker opening (which is the 13½” x 2½” hole in your hearth slab), the heat from the fire and smoke is retained in the upper oven firebrick which aids in the smoking / cooking process. If you didn’t have insulation between the 2 rows of firebrick and the concrete panels, the outside temperatures would cool the firebrick and your oven would be much less efficient.
So where do you find Vermiculite or Perlite in your area? If your local MASONRY and LANDSCAPE SUPPLY 40 doesn’t carry 2cf or 4cf bags of Vermiculite or Perlite, you can also try your local PLANT NURSERY 9 as both minerals are used in potting soil to help retain moisture (it’s those little white balls in the potting soil). If that’s a no-go, simply jump over to the Uline.com 109 website (www.Uline.com/BL_3801 184) and purchase (2) of the 4cf bags of GRADE 2 or GRADE 3 Vermiculite. They will ship the Vermiculite to your home or jobsite. Their Vermiculite is always in stock and their prices are decent.
DO NOT go to your local Big Box hardware store or Plant Nursery and buy bag after bag of the small 8qt or 10 Liter bags of Vermiculite or Perlite. You would need over 200 of the 8qt bags to equal the 8cf bags of Vermiculite / Perlite that is needed for the construction of your BrickWood Box. If you see the words “Quart” or “Liter” on the bag – put it back on the shelf and look for 2 cubic foot or 4 cubic bags (like shown below).
How to Mix the Vermiculite / Perlite and Portland Cement Insulation Blend -
VERMICULITE or PERLITE and PORTLAND CEMENT – Dry Mix 5 parts Vermiculite or Perlite - to - 1 part Portland Cement in a Mixing Tub or Wheelbarrow - (5 Gallons / Shovel - to - 1 Gallon / Shovel). Add just enough water to get the entire blend wet as you mix with a shovel or hoe (hoes are good for this process). DO NOT OVER WATER! There should be ZERO water puddling! Average drying time is about 5 - 6 days.

The frost line, also called frost depth or freezing depth, is most commonly the depth that the groundwater in soil is expected to freeze. The frost depth depends on the climatic conditions of an area, the heat transfer properties of the soil and adjacent materials, and on nearby heat sources. You have to have freezing weather for a while to have a deep frost line. - wikipedia
If you have a 28" frost line, you will need to build your base slab 28" below grade (“Grade” means “Ground Level”). If your frost line is at 28", you slab will need to be about 36" thick.
As for the need to building a base foundation… that is going to be your call. Several city / states require any load bearing structure be built on a frost line slab. Others city / states have no written law regarding frost line construction, so a standard 6" slab on 4" of gravel is fine.
